Place the pan on a burner and put it on high heat. You do not want a cold center. Mix in brown sugar and salt. It is a delicious rub that is great for cooking on the grill or grill pan. Season steaks with the dry rub, Sear on all sides. Remove and allow spice rub to cool. Sear the meat over a medium high heat and finish in the oven to your temperature preference. Store remaining spice rub in an air tight jar. Dry fry in a fry pan for about 2 minutes, stirring constantly until fragrant. Sprinkle each piece of steak generously with spice rub on both sides. Usually give the steak about 20 minutes to warm up. It is important to let the meat warm because when you cook it in the pan it will cook more evenly.
